Onion Roasted Potatoes

This is my favorite way to eat potatoes. You can use them as a side or as part of the main dish.

What you need:

  • 5 lb. bag of red potatoes
  • Olive oil
  • Dry onion soup mix

What you do:

Preheat oven to 450 degrees.

Wash and boil whole potatoes.



Put generous amount of olive oil on a baking sheet...potatoes stick so don't be skimpy. Place strained potatoes on baking sheet, leaving some room between each. At this point you need a potato masher, but since I don't own one I used the bottom of a glass. Press down on each potato, mashing them on the baking sheet.











Lightly brush each potato with olive oil and sprinkle onion soup mix on each one.




Bake at 450 degrees on the top rack for about 20 minutes. They should be browning and some edges should be burning.
